One of my favorite snacks is popcorn. There are so many ways to make popcorn, but this one is one of my favorites. I love to serve this up when friends come over to hangout and enjoy a drink or a movie at our house. I have also been known to put some popcorn out before a dinner party along with before dinner drinks. There is nothing so simple, but also so satisfying as popcorn.
My recipe for Dill & Parmesan Popcorn is one I’ve been making for years and had not written down the exact recipe and steps until I needed to do so for this post. My friends who try this popcorn say, “This is REALLY good popcorn,” and I think that is half of the secret – it looks so ordinary and you think you are grabbing a handful of regular microwave-popped popcorn – but ALAS, you are experiencing a very big upgrade. Nothing beats fresh popcorn and you’ll start reaching for popping kernels over the microwaved-bagged stuff before you know it.

Ingredients
1/2 cup popping corn
2 tablespoons olive oil
3 tablespoons butter
1 cup freshly grated parmesan
2 teaspoons dill weed
1 to 1 1/2 teaspoons granulated garlic
1 tablespoon salt, or more to taste
Directions
- Heat the olive oil in a medium pot over medium heat. Add the popcorn kernels and cover. Shake the pot frequently until all kernels have popped, about 5 minutes.
- While the popcorn is cooking, melt 3 tablespoons of butter in a small pot or in a microwave safe bowl and set aside.
- Turn off the heat and transfer the popcorn to a large bowl. Pour butter over the popcorn and toss. Next, sprinkle the parmesan, dill weed, garlic powder, and salt over the popcorn and toss to coat evenly. Serve immediately.
